1. Parmesan Crusted Chicken








Ingredients: 

-4 boneless, skinless chicken breasts 

-1/4 cup all-purpose flour 

-2 large eggs 

-1/2 cup bread crumbs 

-1/2 cup grated Parmesan cheese 

-1/2 teaspoon garlic powder and

-1/2 teaspoon paprika 

-1/4 teaspoon salt 

-1/4 teaspoon black pepper 

-2 tablespoons butter 

-2 tablespoons olive oil

Instructions:

1. Preheat oven to 350F.

2. In a shallow bowl, mix together the flour, garlic powder, paprika, salt, and pepper.

3. In a separate shallow bowl, beat the eggs with a fork.

4. In a third shallow bowl, mix together the breadcrumbs and Parmesan cheese.

5. Dip each chicken breast in the flour mixture, shaking off any excess.

6. Dip the chicken in the egg mixture, then in the breadcrumb mixture, making sure to coat both sides.

7. Heat the butter and olive oil in a large skillet over medium heat.

8. Add the chicken to the skillet and cook for about 5 minutes on each side, until golden brown.

9. Place the chicken in a baking dish and bake for 15 minutes, or until the chicken is cooked through.

10. Serve hot and enjoy!





2. Baked Salmon with Lemon and Dill












Ingredients:

- 4 (6-ounce) salmon fillets

- 2 tablespoons olive oil

- 1 teaspoon garlic salt

- 1 teaspoon dried dill

- Juice of 1/2 lemon

- 2 tablespoons butter, melted

- 2 tablespoons chopped fresh parsley

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Place salmon fillets in a greased baking dish.

3. Drizzle olive oil over salmon and season with garlic salt and dill. Squeeze the lemon juice over the top.

4. Bake in preheated oven for 15 to 20 minutes, or until salmon is cooked through and flakes easily with a fork.

5. Remove from oven and brush with melted butter. Sprinkle with chopped parsley. Serve warm.

3. Spicy Honey Garlic Shrimp






Ingredients:

• 1 pound large shrimp (peeled and deveined)

• 2 tablespoons olive oil

• 2 cloves garlic (minced)

• 4 tablespoons honey

• 2 tablespoons Sriracha

• 2 tablespoons reduced sodium soy sauce

• 2 teaspoons cornstarch


• 2 tablespoons water

Instructions:


1. Heat olive oil in a large skillet over medium-high heat.

2. Add garlic and cook until fragrant, about 1 minute.

3. Add shrimp and cook until shrimp is cooked through, about 3-4 minutes.

4. In a small bowl, combine honey, Sriracha, soy sauce, cornstarch, and water.

5. Pour the sauce into the skillet and bring to a gentle simmer.

6. Simmer for 2-3 minutes until the sauce thickens.

7. Serve warm over steamed rice. Enjoy!




4. One-Pan Honey Mustard Chicken & Veggies 









Ingredients:

- 4 boneless, skinless chicken breasts

- 2 tablespoons olive oil

- 2 tablespoons Dijon mustard

- 2 tablespoons honey

- 4 cloves garlic, minced

- 2 tablespoons fresh rosemary, minced

- 2 tablespoons fresh thyme, minced

- 2 tablespoons fresh parsley, minced

- Salt and pepper to taste

- 2 large sweet potatoes, diced

- 2 cups green beans

Instructions:

1. Preheat oven to 400°F (200°C).

2. In a small bowl, mix together olive oil, Dijon mustard, honey, garlic, rosemary, thyme, parsley, and salt and pepper.

3. Arrange chicken in a large baking dish. Pour the honey mustard mixture over the chicken and spread it evenly.

4. Add sweet potatoes and green beans to the baking dish and toss everything with the sauce.

5. Bake in preheated oven for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.

6. Serve hot. Enjoy!




5. Sheet Pan Fajitas










Ingredients:

- 2 bell peppers (any color), sliced

- 1 large onion, sliced

- 2 tablespoons olive oil

- 1 teaspoon chili powder 

- 1 teaspoon garlic powder

- 1 teaspoon cumin

- 1 teaspoon oregano

- 1 teaspoon paprika

- Salt and pepper

- 1 pound boneless, skinless chicken breasts, cut into strips

- 8-10 flour tortillas

- Optional toppings: salsa, sour cream, lettuce, cheese

Instructions:

1. Preheat the oven to 400°F.

2. Place the bell peppers and onions on a large sheet pan. Drizzle with olive oil and season with chili powder, garlic powder, cumin, oregano, paprika, salt, and pepper. Toss to combine.

3. Add the chicken strips to the sheet pan and toss to coat.

4. Place the sheet pan in the oven and bake for 25 minutes, stirring once halfway through.

5. When the chicken is cooked through, remove the sheet pan from the oven.

6. Place the chicken and vegetables onto warm tortillas and top with your favorite toppings. Enjoy!




6. Sausage and Peppers












Ingredients:

- 1 pound Italian sausage 

- 2 bell peppers, sliced

- 1 large onion, sliced

- 2 cloves garlic, minced

- 1 teaspoon Italian seasoning

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 2 tablespoons olive oil

Instructions:

1. In a large skillet over medium-high heat, cook the Italian sausage for about 8 minutes, stirring occasionally, until it's cooked through and beginning to brown.

2. Add the bell peppers, onion, garlic, Italian seasoning, salt, and pepper to the skillet. Cook for 8 minutes, stirring occasionally.

3. Drizzle in the olive oil and stir. Cook for an additional 5 minutes, or until the vegetables are tender.

4. Serve the sausage and peppers warm. Enjoy!





7. Baked Mac and Cheese










Ingredients:

- 1 pound elbow macaroni

- 4 tablespoons butter, divided

- 1 tablespoon all-purpose flour

- 2 cups milk

- 1 teaspoon salt

- 1/4 teaspoon ground black pepper

- 2 cups shredded cheddar cheese

- 2 tablespoons breadcrumbs

Instructions:

1. Preheat oven to 350°F (175°C).

2. Cook the macaroni according to package instructions. Drain and set aside.

3. In a medium saucepan, melt 3 tablespoons of butter over medium heat.

4. Add the flour and whisk until combined with the butter.

5. Gradually add the milk, whisking constantly until combined.

6. Bring the mixture to a light boil and cook for 1 to 2 minutes, whisking constantly.

7. Add the salt and pepper to the sauce.

8. Remove the sauce from the heat and add the cheese. Stir until the cheese is melted and the sauce is smooth.

9. Add the cooked macaroni to the sauce and stir until combined.

10. Transfer the macaroni and cheese to a baking dish and top with the remaining tablespoon of butter and the breadcrumbs.

8. Spaghetti and Meatballs
















Ingredients:

- 1 lb. ground beef

- 1/2 cup finely chopped onion

- 1/2 cup Italian-style breadcrumbs

- 1/4 cup grated Parmesan cheese

- 1/4 cup chopped fresh parsley

- 1 large egg, lightly beaten

- 2 cloves garlic, minced

- 1 tsp. dried oregano

- 1/2 tsp. salt

- 1/4 tsp. black pepper

- 2 tbsp. olive oil

- 1 (28-oz.) can crushed tomatoes

- 1 (14-oz.) can tomato sauce

- 2 tsp. sugar

- 1/2 tsp. dried basil

- 1/4 tsp. dried thyme

- 1/4 tsp. crushed red pepper flakes

- 1/4 tsp. garlic powder

- 8 oz. spaghetti

Cooking Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine ground beef, onion, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix together until well combined.

3. Form the mixture into 1-inch meatballs and place on a baking sheet. Bake for 20 minutes, or until cooked through.

4. Heat the olive oil in a large pot over medium-high heat. Add the crushed tomatoes, tomato sauce, sugar, basil, thyme, red pepper flakes, and garlic powder. Stir to combine.

5. Add the cooked meatballs to the sauce and reduce heat to low. Simmer for 20 minutes.

6. Meanwhile, bring a large pot of salted water to a boil. Cook spaghetti according to package instructions. Drain and return to pot.

7. Add the spaghetti to the meatball sauce and toss to combine. Serve warm.





9. Stuffed Peppers











Ingredients:

- 4 bell peppers 

- 1 pound ground beef 

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1 cup cooked long-grain white rice

- 1/2 teaspoon dried oregano

- 1/4 teaspoon salt

- 1/4 teaspoon ground black pepper

- 1/4 teaspoon cayenne pepper

- 1 (14.5 ounce) can diced tomatoes

- 1/2 cup shredded Cheddar cheese

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Slice the tops off the bell peppers and remove stems and seeds. Discard tops.

3. In a large skillet over medium-high heat, cook the ground beef, onion, and garlic until the beef is no longer pink, about 7 minutes. Drain any fat.

4. Stir in the cooked rice, oregano, salt, black pepper, cayenne pepper, and diced tomatoes. Cook until heated through.

5. Spoon the beef mixture into the peppers and place in a large baking dish.

6. Bake uncovered in preheated oven for 25 minutes.

7. Sprinkle with cheese and bake for an additional 5 minutes, or until cheese is melted.





10. Pizza Casserole









Ingredients:

-1 lb ground beef

-1 onion, diced

-1 green bell pepper, diced-1 (14.5 oz) can diced tomatoes

-1 (8 oz) can tomato sauce

-1 tablespoon Italian seasoning

-1 teaspoon garlic powder

-1/2 teaspoon sugar

-1/2 teaspoon salt

-1/4 teaspoon black pepper

-3 cups shredded mozzarella cheese, divided

-1/2 cup grated Parmesan cheese

-1 (16 oz) package uncooked penne pasta

Instructions:

1. Preheat oven to 350°F.

2. In a large skillet over medium heat, cook ground beef, onion, and bell pepper until beef is browned and vegetables are tender. Drain off any excess fat.

3. Add diced tomatoes, tomato sauce, Italian seasoning, garlic powder, sugar, salt, and pepper. Simmer for 10 minutes, stirring occasionally.

4. In a large bowl, combine 2 cups of the mozzarella cheese, Parmesan cheese, and cooked pasta.

5. Add the beef mixture to the bowl and stir to combine.

6. Transfer the mixture to a 9x13 inch baking dish.

7. Sprinkle the remaining 1 cup of mozzarella cheese over the top.

8. Bake for 25 minutes or until the cheese is melted and bubbly.

9. Let cool for 10 minutes before serving. Enjoy!






11. Chicken Pot Pie









Ingredients:

- 2 tablespoons butter

- 1/4 cup diced onion

- 1/4 cup diced celery

- 2 cloves garlic, minced

- 2 tablespoons all-purpose flour

- 1 cup chicken broth

- 1/2 cup milk

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 2 cups diced cooked chicken

- 1 cup frozen mixed vegetables

- 1/2 cup frozen corn

- 1/2 cup frozen peas

- 1/2 cup frozen carrots

- 1/3 cup butter

- 1/3 cup all-purpose flour

- 1/2 cup chicken broth

- 1/2 cup milk

- 1 (9 inch) unbaked pie crust

Instructions:

1. Preheat oven to 375 degrees F (190 degrees C).

2. In a medium saucepan, melt 2 tablespoons butter over medium heat. Add onion, celery and garlic; cook and stir until tender. Stir in 2 tablespoons flour until blended. Gradually stir in 1 cup chicken broth and 1/2 cup milk. Cook, stirring occasionally, until thick and bubbly. Stir in salt and pepper.

3. Remove from heat. Stir in chicken, vegetables, corn, peas and carrots. Spoon mixture into pie crust.

4. For the topping, melt 1/3 cup butter in a medium saucepan over medium heat. Stir in 1/3 cup flour until blended. Gradually stir in 1/2 cup chicken broth and 1/2 cup milk. Cook, stirring often, until thick and bubbly.

5. Pour topping over filling.

6. Bake in preheated oven for 30 minutes, or until crust is golden brown and filling is bubbly. Let cool for 10 minutes before serving.





12. Easy Shepherd's Pie








Ingredients:

- 2 tablespoons of olive oil

- 1 medium onion, diced

- 1 lb ground beef

- 2 cloves garlic, minced

- 1 tablespoon of tomato paste

- 1 teaspoon of dried thyme

- 2 tablespoons of Worcestershire sauce

- 1 cup of beef broth

- 2 tablespoons of all-purpose flour

- 2 cups of frozen mixed vegetables

- 4 cups of mashed potatoes

- Salt and pepper to taste


Cooking Instructions:


1. Preheat oven to 375°F.

2. Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.

3. Add the ground beef and cook, breaking it up with a spoon, until it is browned, about 8 minutes.

4. Add the garlic, tomato paste, thyme, Worcestershire sauce, and beef broth. Bring to a simmer and cook for 5 minutes.

5. Sprinkle the flour over the mixture and stir until combined. Simmer for another 5 minutes.

6. Remove from heat and stir in the frozen vegetables.

7. Spread the beef mixture into a 9x13 inch baking dish.

8. Spread the mashed potatoes evenly over the top of the beef mixture.

9. Bake for 25 minutes or until the potatoes are golden brown and bubbly.

10. Let cool for 10 minutes before serving.




13. Fish Tacos with Creamy Cilantro Sauce









Ingredients:

- 2 pounds of fish fillets (cod, tilapia or mahi mahi work great)

- 2 tablespoons olive oil

- 1 tablespoon chili powder

- 1 teaspoon garlic powder

- 1 teaspoon cumin

- 1 teaspoon oregano

- 1/2 teaspoon smoked paprika

- Salt and pepper to taste

- 8-10 small flour or corn tortillas

- 1/2 cup sour cream

- 1/2 cup mayonnaise

- 1/4 cup cilantro, finely chopped

- 1/2 teaspoon lime juice

- 1/4 teaspoon garlic powder

- 1/4 teaspoon cumin

- Salt and pepper to taste

Instructions:


1. Preheat oven to 375 degrees.


2. Place fish fillets on lined baking sheet. Drizzle with olive oil and sprinkle with chili powder, garlic powder, cumin, oregano, smoked paprika, salt and pepper. Bake for 15 minutes or until cooked through.

3. While fish is cooking, prepare the creamy cilantro sauce. In a small bowl, combine sour cream, mayonnaise, cilantro, lime juice, garlic powder, cumin, salt and pepper. Stir until well combined.

4. Heat tortillas in the microwave for 30 seconds.

5. To assemble tacos, place 1-2 fish fillets on each tortilla and top with cilantro sauce. Serve with your favorite toppings. Enjoy!


14. Baked Sweet and Sour Chicken








Ingredients:

- 4 boneless, skinless chicken breasts, cut into 1-inch cubes

- 1/2 cup all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon garlic powder

- 1/2 teaspoon salt

- 1/4 teaspoon pepper

- 2 large eggs, lightly beaten

- 1/4 cup vegetable oil

- 1/2 cup pineapple juice

- 1/2 cup packed brown sugar

- 1/4 cup white vinegar

- 1/4 cup ketchup

- 1/4 cup soy sauce

- 2 tablespoons cornstarch

- 1 green bell pepper, cut into 1-inch pieces

- 1/2 cup pineapple chunks

Instructions:


1. Preheat oven to 375°F.

2. In a shallow bowl, mix together flour, baking powder, garlic powder, salt, and pepper.

3. Place the beaten eggs in another shallow bowl.

4. Dip the chicken cubes in the flour mixture, then the egg mixture, and then back in the flour mixture.

5. Heat the oil in a large skillet over medium-high heat.

6. Working in batches, add the chicken cubes and cook until lightly golden, about 2-3 minutes per side.

7. Place the chicken in a 13x9-inch baking dish.

8. In a medium bowl, whisk together pineapple juice, brown sugar, vinegar, ketchup, soy sauce, and cornstarch.

9. Pour the mixture over the chicken.

10. Add the bell pepper and pineapple chunks.

11. Bake for 30 minutes, stirring occasionally.

12. Serve over rice. Enjoy!





15. Baked Ziti










Ingredients:

-1 pound ziti pasta

-1 (15-ounce) container ricotta cheese

-1/4 cup grated Parmesan cheese

-1 large egg

-2 cups shredded mozzarella cheese, divided

-1/2 teaspoon Italian seasoning

-1/4 teaspoon garlic powder

-1 (24-ounce) jar marinara sauce

-1/4 cup chopped fresh parsley

Instructions:

1. Preheat oven to 350°F. Grease a 9x13-inch baking dish.

2. Cook ziti pasta according to package instructions. Drain and set aside.

3. In a medium bowl, mix together ricotta cheese, Parmesan cheese, egg, 1 cup of mozzarella cheese, Italian seasoning, and garlic powder.

4. Spread half of the marinara sauce into the bottom of the prepared baking dish.

5. Add cooked ziti to the baking dish and spread out evenly.

6. Top ziti with ricotta cheese mixture and spread out evenly.

7. Top ricotta layer with remaining marinara sauce.

8. Sprinkle remaining 1 cup of mozzarella cheese over the top.

9. Bake for 25-30 minutes, or until cheese is melted and bubbly.

10. Sprinkle chopped parsley over the top and serve.



16. Garlic Butter Baked Cod







Ingredients:

4 (6-ounce) cod fillets

3 tablespoons melted butter

2 cloves garlic, minced

1 teaspoon dried parsley Kosher salt and freshly ground black pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. Line a baking sheet with parchment paper or aluminium foil.

3. Place cod fillets onto the prepared baking sheet.

4. In a small bowl, combine melted butter, garlic, parsley, salt and black pepper; mix well.

5. Brush the garlic butter mixture onto both sides of the cod fillets.

6. Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

7. Serve immediately. Enjoy!




17. Beef Stroganoff








Ingredients:

-1 lb. beef sirloin, cut into thin strips

-3 tablespoons butter

-1 medium onion, chopped

-1 (10.75 ounce) can condensed golden mushroom soup

-1/2 cup sour cream

-1/2 cup beef broth

-2 tablespoons Worcestershire sauce

-1/4 teaspoon garlic powder

-1/4 teaspoon black pepper

-3 cups cooked egg noodles

Instructions:

1. Heat the butter in a large skillet over medium heat.

2. Add the beef strips and onion and cook until the beef is browned.

3. Stir in the soup, sour cream, beef broth, Worcestershire sauce, garlic powder, and pepper.

4. Reduce the heat to low and let simmer for 10 minutes.5. Serve over cooked egg noodles.




18. Enchilada's









Ingredients:

- 8 (6-inch) corn tortillas 

- 1 teaspoon olive oil 

- 1/2 cup diced onion 

- 1 jalapeno pepper, seeded and diced 

- 1 (15-ounce) can black beans, drained and rinsed 

- 1 1/2 cups cooked, shredded chicken 

- 1/4 teaspoon garlic powder 

- 1/4 teaspoon cumin 

- 1/4 teaspoon chili powder 

- Salt and pepper, to taste 

- 1 (10-ounce) can red enchilada sauce 

- 1 cup grated cheddar cheese 

- 2 tablespoons chopped fresh cilantro, for garnish 

Instructions 

1. Preheat oven to 350°F. 

2. Heat oil in a large skillet over medium heat. Add onion and jalapeno pepper and cook until softened, about 5 minutes. 

3. Add black beans, chicken, garlic powder, cumin, chili powder, salt and pepper, and stir to combine. Cook for an additional 2 minutes. 

4. Spread 1/2 cup of the enchilada sauce in the bottom of a 9x13-inch baking dish. 

5. Dip each tortilla into the remaining enchilada sauce and place onto a plate. Fill each tortilla with the chicken and bean mixture and roll up. Place into the baking dish. 

6. Pour remaining enchilada sauce over the enchiladas. Top with cheese. 

7. Bake for 20 minutes, or until cheese is melted and bubbly. 

8. Garnish with cilantro. Serve warm.



19. Crispy Baked Chicken Wings









Ingredients:

2 pounds chicken wings

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon ground black pepper

1 teaspoon salt

2 tablespoons olive oil

Instructions:

1. Preheat oven to 400°F.

2. Line a baking sheet with parchment paper.

3. In a large bowl, combine the garlic powder, onion powder, smoked paprika, black pepper, and salt.

4. Add the chicken wings to the bowl and use your hands to evenly coat the wings with the spices.

5. Drizzle the olive oil over the wings and use your hands to coat them again.

6. Place the wings on the prepared baking sheet and spread them out in a single layer.

7. Bake for 30 minutes, flipping them over halfway through.

8. Turn the oven to broil and broil for 5 minutes, flipping them over halfway through.

9. Remove from the oven and serve.




20. Creamy Garlic Shrimp Pasta








Ingredients:

- 8 ounces fettuccine pasta

- 1/4 cup butter

- 2 cloves garlic, minced

- 1/2 teaspoon dried oregano

-1/2 teaspoon dried basil

- 1/4 teaspoon salt

- 1/4 teaspoon pepper

- 1/2 cup heavy cream

- 1/4 cup freshly grated Parmesan cheese

- 1 pound shrimp, peeled and deveined

- 2 tablespoons chopped fresh parsley

Instructions:


1. Cook the pasta according to package instructions.

2. In a large skillet over medium heat, melt the butter. Add garlic, oregano, basil, salt, and pepper and cook until fragrant, about 1 minute.

3. Add the cream and Parmesan cheese and stir to combine.

4. Add the shrimp to the skillet and cook until they are pink and cooked through, about 2 minutes.

5. Drain the cooked pasta and add it to the skillet. Stir to combine.

6. Serve the creamy garlic shrimp pasta with a sprinkle of fresh parsley. Enjoy!
